About Claudia
Science matters. So does real life.
Claudia Solt, MS | Founder, Senior Care Nutrition LLC
I’ve spent much of my career exploring nutrition from different perspectives, from research and obesity science to wellness and working directly with older adults. Along the way, I’ve learned that understanding the science is one thing. Figuring out how to make it work in everyday life is another.

My Story
My path to founding Senior Care Nutrition wasn’t exactly a straight line. Looking back, though, the pieces fit together in ways I never could have anticipated.
My interest in nutrition science led to doctoral studies focused on obesity and hormonal influences. When COVID and unexpected life changes altered those plans, I completed my master’s degree in Nutritional Science and continued working in obesity research at the University of Colorado’s Department of Endocrinology, Metabolism, and Diabetes.
Another unexpected turn came during a difficult divorce. Needing flexible work to help cover legal expenses, I returned to caregiving, something I’d genuinely enjoyed during my undergraduate years. What began as a practical decision became a meaningful reminder of how much I loved working with older adults.
One woman I cared for made a particularly lasting impression. She relied heavily on familiar convenience foods, and working alongside her care team, we found ways to make the meals she already enjoyed more nourishing and appealing. It was a simple experience, but one that stayed with me.
Later, working in senior services and community education brought me into contact with even more older adults, families, and professionals dedicated to supporting them. Those experiences helped me recognize an opportunity to bring together two parts of my life that had previously followed very different paths.
And that’s how Senior Care Nutrition came to be. What once seemed like a series of unexpected detours ultimately led me to work I find deeply rewarding.

Education mission and research
Making nutrition knowledge more accessible.
One of the things I enjoy most is sharing what I’ve learned and having conversations that help people make sense of nutrition information. Not everyone needs an individual program, and I don’t believe useful education should only be available to people who can pay for ongoing support.
That’s why complimentary community presentations, caregiver in-services, and educational outreach are an important part of SCN. They give me an opportunity to connect with older adults, families, caregivers, and senior communities while sharing information people can actually put to use.

Start a Conversation →I’m the founder of Senior Care Nutrition LLC, and my goal is to make evidence-based nutrition practical, approachable, and useful in everyday life.
I hold a master’s degree in Human Nutrition and have a background in obesity and metabolic research, including work in the Nutrition and Obesity Research Core at the University of Colorado. I’ve also spent years working within the senior-care community, where I saw firsthand how often older adults want trustworthy nutrition guidance but don’t always know where to turn.
Senior Care Nutrition LLC brings those experiences together. I work with older adults one-on-one and in small groups, helping them make realistic changes that support healthy aging, weight management, strength, energy, and independence.
My approach isn’t about perfect diets or complicated rules. It’s about translating nutrition science into choices that make sense for the way you actually live.
